Ingredients:
- 1 medium-sized butternut squash
- 12 oz macaroni pasta

- 2 cups shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Cut the butternut squash in half lengthwise and scoop out the seeds. Place the halves on a baking sheet, cut side down, and roast for about 45 minutes or until the squash is tender.
3. While the squash is roasting, cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.
4. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to create a roux.
5. Slowly pour in the milk, whisking constantly to prevent lumps. Cook for 5-7 minutes until the mixture thickens.
